Easy High Protein Peanut Butter Cookies Recipe For A High Protein Breakfast or Snack Idea
These cookies have enough substance for you to eat one or two of these as a breakfast cookie. Some mornings I choose to have a couple cookies with my cup of coffee as my breakfast. Cookies for breakfast sounds crazy, but I’m getting tons of protein and will not have a sugar high followed by a crash once I’m at work. I think it’s probably better than some of the granola bars I might opt for when I’m looking for something sweet for breakfast.
Of course, these cookies are a great high protein mid-afternoon snack. Right when those cravings hit and I’m looking for a little something to snack on these peanut butter cookies come to the rescue. If that make it to the afternoon….sometimes they’re the mid-morning snack.
How To Make and Bake Easy High Protein Peanut Butter Cookies
The best part of this recipe (located below) is it’s so quick and easy to make. First, scoop out the peanut butter and put into a bowl. For the protein, add and egg and protein powder. I usually use vanilla, but a peanut butter flavored protein powder would probably be great too. Add some unsweetened apple sauce. Mix these ingredients together until well blended. Add peanut butter baking chips – half peanut butter and half chocolate are great too and are pictured above.

Easy High Protein Peanut Butter Cookies Recipe
- 1 cup Peanut Butter
- 2 scoops Protein Powder
- 1 Egg
- ¼ cup Unsweetened Applesauce
- ½ cup Baking Chips - Peanut Butter or Peanut Butter/Milk Chocolate mixture
- Blend together all of the ingredients except the baking chips.
- Add in the baking chips.
- Roll into cookie balls.
- Flatten with a fork.
- Bake at 350 for 12 minutes.
