Easy Greek Chicken Salad Recipe For A High Protein Lunch Idea
The inspiration for this salad was from a day of shopping at Costco and trying a sample of one of their pre-made salads made with mostaccioli. In another blog post, I share how easy it is to start changing eating habits by using cauliflower, spaghetti squash, egg plant and zucchini in place of pasta. If you’re just starting to try to make that eating change, this is a great go to recipe to have on hand. It just takes a few go to recipes that helps making healthy changes so much easier.
How To Prepare Greek Chicken Salad For Your Lunch
Save time putting this lunch together by making it ahead of time for the first few days of the week. Toss together all the ingredients except for the Greek dressing. Pull out a few lunch containers and cover the bottom with the Greek dressing (or put the Greek dressing in separate containers depends upon your preference). Divide the Greek Chicken Salad across the containers. Store in your refrigerator for a quick grab and go lunch each morning.
